This handcrafted, hand-picked tea is harvested in January after the Dà Xuě大雪 ‘Big Snow’ solar term that falls in December. After the leaves are picked, they are left to wither for at least 7 days before drying at a low temperature. For 2 of those days of withering, the leaves are taken outside in the morning to wither in the morning sun for about 6 hours. The result is a harmonious balance of yin and yang – while the tea is picked during the most yin time of year, the morning sunlight allows the leaves to absorb the inhale of the earth and the rising yang energy of morning/midday.

Honey Snow White offers hints of olive oil in its initial aroma. Sweet, honey nectar emerges upon tasting, and the liquid is dense and bright and leaves a lingering in the mouth. Drinking this tea is almost like eating a delectable meal - perhaps a light and savory salad with olive oil dressing.

Steeping Guidelines:

6g | 6oz. @ 200˚F | 2-3 mins. (after 6 steeping, can be longer than 3 mins)
May be re-steeped multiple times, go as many you think it is done!!
Use a glass or porcelain teapot.
Drain completely and serve.

This tea is produced at the Yeh family farm at Da An, Shan Lin Xi 杉林溪 at an elevation of 1500 meters. The property has a modern 5-star facility for processing tea as well as an ancient house over 100 years old. Three generations of the Yeh family have lived in the house. The Yeh family takes pride in the care that they apply to the land and the tea plants on the farm.
