Shan Lin Xi High Mountain Autumn Honey Dew

The tea leaf went through “high-heat” May to “autumn white dew 白露” September during the prosperous breeding season of Little Green Leaf hopper/tiny cicadas. Tiny cicadas whose beneficial bites nip the astringency and release the unique honeyed aroma of these teas. Lovely roasted notes on the edges, with a woody, but sweet and mellow fruit flavor.

The confluence of conditions required to create this specialized release of perfume from these leaves are rare and circumstantial. In these challenging weather times, Autumn Honey Dew is limited in availability.

This tea is produced at the Yeh family farm at Da An, Shan Lin Xi 杉林溪 at an elevation of 1500 meters.  The property has a modern 5-star facility for processing tea as well as an ancient house over 100 years old.  Three generations of the Yeh family have lived in the house.  The Yeh family takes pride in the care that they apply to the land and the tea plants on the farm.

Steeping Guidelines:

• 6g or 1Tbsp | 6oz. @ 205˚F | 1 minute
• May be re-steeped multiple times.
• Use a porcelain or yixing teapot.
• Drain completely and serve.
