This month we are going to explore 2 Phoenix Oolong teas from Phoenix Mountain in Guangdong, China. When I first discovered Phoenix Oolongs, it is a challenging tea for me, because it is very hard to brew due to its delicate nature easily altered by the brewing process. Just the subtle change of water temperature or a few more seconds of brewing time can make the tea taste different every time. I am constantly in pursuit of that optimal flavor. With my staff and customers, we experimented with various ways of brewing, searching for that elusive fragrance in the Phoenix Oolong tea. The intoxicating perfume and the lingering flavors of Phoenix Ya Sai is unforgettable, smooth and silky, but of course, when done correctly. With autumn falls upon us, I want to invite you to this special tasting, a cozy and warm journey to these Phoenix Oolongs.
