Unkaku, meaning “crane in the clouds,” passes like a sweet fog over the tongue, at once feathery and dense. Versatile enough to prepare as a thick matcha (koicha) or thin matcha (usucha), tea drinkers with sensitive palates will appreciate the more pronounced sweetness of this ceremonial-grade tea. More intensely flavorful, but with lighter umami notes than Wako (especially when prepared as a koicha), it soars effortlessly above mere marketplace offerings. 

Steeping Guidelines:

• Koicha 4g | 1oz. @ 180˚F | whisk slowly until frothy
• Usucha 2g | 3-4oz. @ 180˚F | whisk vigorously until frothy
