Zheng Shan Wu Shi Cha 正杉午時茶 (Zhèng shān wǔshí chá).
A green tea made from the Qing Xin oolong varietal, Zheng Shan Wu Shi Cha gets its name, “Wu Shi" 午時 from its noontime harvest. The tea is picked as it absorbs the full sunshine, offering a light and gentle taste with a fresh and elegant aroma. Our Shan Lin Xi farmers do not process this tea every year, and they preserve the freshness of their small batches of this tea by storing it in the freezer.
With a smooth, refreshing mouthfeel and the capacity to be steeped many times, this tea tends toward less astringency than typical green teas. This 2024 harvest tea has a sweet, mellow taste and aroma with seaweed flavor and highlights of zest and spice, as well as underlying hints of preserved cherry blossom leaf. The leaf is bright emerald green, and the brewed tea is a bright jade color.
**The previous batch of Zheng Shan Wu Shi Cha from 2022 had more distinct highlights of preserved cherry blossom leaf, whereas this 2024 batch is more fresh and green in comparison. We enjoy both in their differences ~ and we are looking forward to seeing how the 2024 batch changes over time.
Tea Musings: inspiring and refreshing 振奮人心 沁人馨脾
This tea is produced at the Yeh family farm at Da An, Shan Lin Xi 杉林溪 at an elevation of 1500 meters. The property has a modern 5-star facility for processing tea as well as an ancient house over 100 years old. Three generations of the Yeh family have lived in the house. The Yeh family takes pride in the care that they apply to the land and the tea plants on the farm. They are delighted to share a cup of tea that has emotion, and is warm and full of human touch.
Steeping Guidelines:
- 6g | 6oz. @ 185-190˚F | 1 min.
- May be re-steeped multiple times.
- Use a glass or porcelain teapot.
- Drain completely and serve.
