It is a labor-intensive process to get a more fiery taste than the standard 'Fire Tree'. Normally it takes about 45-50 hours to roast the teas, including many times of in & out of the roaster.
The teas are produced at the Yeh family farm at Da An, Shan Lin Xi 杉林溪 at an elevation of 1500 meters. The property has a modern 5-star facility for processing tea as well as an ancient house over 100 years old. Three generations of the Yeh family have lived in the house. The Yeh family takes pride in the care that they apply to the land and the tea plants on the farm.

Tasting Notes (7/22/2021):
Once rinsed, the wet leaves have a sweet, smoky caramel aroma. The first cup yields a dark, roasted cacao aroma, balanced with a deliciously sweet toasted almond flavor. As the steeps develop, the toasted almond note gives way to delectably astringent notes of black sesame and sweet longan wood smoke.
