鳳凰單叢高山老叢鴨屎香 The Phoenix Honeysuckle Ya Sai Old Grove High Mountain is in a league of its own. The tea’s leaves came from a Ya Sai grove that has rooted 1000-1400 meters above sea level over 25 years ago. With its first steeping, the tea’s intense honeysuckle perfume permeates everything it touches. As the sweetness of the honeysuckle embraces the palate, the buttery almond cream follows, and with each steeping continues that luscious texture with the addition of a cleansing and dry aftertaste, giving it a kaleidoscopic and narrative composition. Our batch is custom processed to our specifications, featuring a lighter roast than you'll find elsewhere to highlight its sweet honeysuckle fragrance. As arguably the most famous tea that comes from Phoenix Mountain, this Honeysuckle Ya Sai returns to our collection in limited quantity.
Steeping Guidelines:
- 6g or 2Tbsp | 8oz. @ 195˚F | 45 seconds
Gong Fu style 6oz. of water:
- First steeping 30 seconds, increase 10 seconds next steeping for the smooth and sweeter taste.
- Keep increasing the steeping time to your personal preference of the taste for the rest of steeping.
- May be re-steeped multiple times.
- Use a porcelain or YiXing teapot.
- Drain completely and serve.
It is not a secret that our 2022 batch is exceptionally good, more flavorful and slightly different with every steeping. Unlike any other, this batch is able to endure longer steeping time and or more steepings, like a beautiful story that never ends.
Tasting Notes (6/18/2020):
Very strong honey aroma on the wet leaves. The liquid is very clean. A lightly caramelized body gives way to a sweet honeysuckle perfume finish. Absolutely no astringency, incredibly smooth. The cup after drinking smells like unflavored cotton candy.
