A yet-to-be-patented, anaerobic processing technique gives this highly limited tea a one-of-a-kind character. Mr. Chen's confidential processing technique increases the tea's natural content of GABA, a rare neurotransmitter responsible for regulating stress and sleep. Known by the locals of Wenshan, Taiwan as “Jia Long,” its heady fragrance and broad, mead-like sweetness rests atop rich, honeyed low notes, which gain added depth and complexity from aging. Highly oxidized and unroasted, its character hints toward that of a fine red tea, while still maintaining the complexity and aromatics of the oolong that it is. We find it to be one of the most superb teas in our collection.
