Hatsu Enishi 初緣 is made from the covered (shade-grown) tea plants of the Sa-midori and Sae-midori varietals. Harvested in mid-May to early-June, Hatsu Enishi greets the drinker with a bright, green aroma. Full-bodied with a creamy finish, Hatsu Enishi offers a beautiful balance of freshness and sweetness. Suitable for preparation as koicha (thick-style) or usucha (thin-style).
Koicha is used in Japanese tea ceremony to make tea with a very thick consistency. Because of the very high ratio of matcha to water, koicha matcha must be cultivated and produced from only the very best, fresh young tea leaves.
Hatsu Enishi 初緣 is available in limited quantity. We are experimenting with new seasonal matcha that we, and our customers, can enjoy along with our regular matcha supply.
Preparation Guidelines:
- Koicha 4g | 1oz. @ 180˚F | whisk slowly until frothy
- Usucha 2g | 2oz. @ 180˚F | whisk vigorously until frothy
