Hastu Kaori 初薰 is carefully harvested around mid-May to early June from the covered (shade-grown) tea leaves of the early-maturing Sa-midori varietal. Mellow and smooth in aroma and taste, Hatsu Kaori is ideal for the matcha lover and novice alike for more emphasis on subtlety than sharpness. Can be prepared either as koicha (thick-style) or usucha (thin style).
Koicha is used in Japanese tea ceremony to make tea with a very thick consistency. Because of the very high ratio of matcha to water, koicha matcha must be cultivated and produced from only the very best, fresh young tea leaves.
Hatsu Kaori 初薰 is available in limited quantity. We are experimenting with new seasonal matcha that we, and our customers, can enjoy along with our regular matcha supply. Hatsu Kaori offers a distinct taste from our Wako, Gin JAS Organic, Choan and Tenju with a softer, mellower taste.
Preparation Guidelines:
- Koicha 4g | 1oz. @ 180˚F | whisk slowly until frothy
- Usucha 2g | 2oz. @ 180˚F | whisk vigorously until frothy
