Jin Shuan 金萱 is a varietal of oolong tea developed in 1980. The tea is also known as #12 or as "Milk Oolong". It originates from Taiwan. It is known for having a full, creamy, milk-like body with an aroma reminiscent of osmanthus flowers.
Jin Shuan can be cultivated in mountainous terrain although mostly grown in lower altitudes. We are pleased to have the Jin Shuan grown at 1500-1600 meters in Ali Shan. This Jin Shuan grown at high altitude tends to exhibit a better flavor profile, and also hold the aroma better throughout multiple steeps.
Our Ali Shan High Mountain Tea is from a tea farm in Shi Zhuo that has been farmed for over 40 years and is operated by the 2nd generation of the family.
Ali Shan tea is a high mountain oolong tea grown in the central mountains of Taiwan. This slower growth results in a deep flavor that is prized by many oolong enthusiasts
In Ali Shan, the sunny mountain slopes of the mountains provide abundant sunshine in the morning, which provides endless kinetic energy for the growth of tea; in the afternoon, the sunlight diffuses warmly as it is shielded by clouds; soon, the cold mountain breeze brings a sudden drop in temperature, cooling the tea through the evening.
The high mountain environment provides the teas with a fine texture, a plump and healthy appearance, and is rich in polyphenols and pectin. The brewed tea liquor is clear and golden, the taste is smooth and refreshing, and the aroma exudes elegance.
Steeping Guidelines:
- 5g or 1Tbsp | 6oz. @ 205˚F | 1 minute
- May be re-steeped multiple times.
- Use a porcelain or glass teapot.
- Drain completely and serve.
