Wild tea bushes that have lived for over 1000 years still exist in the mountains of Jin Zhai, Anhui China, a series of deep, pristine, remote mountains with fewer than 100 households in scattered villages throughout. Here, the villagers forage from these wild tea bushes to make a specialty green tea without fanfare, only for the prestige of gift giving to their local government officials. Foraging is labor intensive, and the villagers have to traverse through deep woods and bushes strewn far and wide to find enough tea buds to make even a small batch. We commission an extra batch for our American audience each Spring, to taste the difference in wild, uncultivated tea nourished by only the sun and morning dew.
Tasting Profile: A long lasting nutty body reminiscent of roasted almonds with the sweetness of granola. A strong presence of dark chocolate notes and a deep and rich mouth feel finishing with a crisp clean finish.
