Unkaku, meaning “crane in the clouds,” passes like a sweet fog over the tongue, at once feathery and dense. Versatile enough to prepare as a thick matcha (Koicha) or thin matcha (Usucha), tea drinkers with sensitive palates will appreciate the more pronounced sweetness of this ceremonial-grade tea. More intensely flavorful, but with lighter umami notes than Wako and Choan matchas (especially when prepared as a Koicha), it soars effortlessly above mere marketplace offerings.
Enjoy in a traditional ceramic chawan—perhaps with a pillowy mochi.
