It requires not only expertise—selecting precisely sized buds before the April rains, stopping oxidation at the moment of peak flavor—but skilled, seasoned hands—the tea is dried in a fiery, 100º C wok that singes the artisans’ fingers as they deftly keep even a single leaf from burning. The hour-long hand roasting creates leaves so delicate, they resemble tiny, satin-fine pine needles that taste creamy, sweet, and like nothing else on earth.
