The technique behind this tea is so demanding, only nine artisans in the world can accomplish it. It requires not only expertise—selecting precisely sized buds before the April rains, stopping oxidation at the moment of peak flavor—but skilled, seasoned hands—the tea is dried in a fiery, 100º C wok that singes the artisans’ fingers as they deftly keep even a single leaf from burning. The hour-long hand roasting creates leaves so delicate, they resemble tiny, satin-fine pine needles that taste creamy, sweet, and like nothing else on earth.
