Shuixian, or “Water Immortal,” is a long-enduring oolong, and perhaps the oldest there is. Its lengthy, resilient leaves are the only varietal able to withstand the any harvesting in the winter. Each batch is roasted over charcoal heat for about two weeks and allowed to almost fully oxidize prior to release. The shorter roast, compared to the springtime harvest, gives this grade a refreshingly unadorned appeal.
