Kuon has a vivid green color, a long aftertaste, and a rich umami that make it a delight like other high grade matchas. However, Kuon stands out because it has a uniquely bright bitterness. Of course, all matcha will have some bitterness, but Kuon's bitterness is more refined, comparable to a wine with refined tannins.
Koicha is used in Japanese tea ceremony to make tea with a very thick consistency. Because of the very high ratio of matcha to water, koicha matcha must be cultivated and produced from only the very best, fresh young tea leaves.
