White teas were ambiguously
understood as either a part of the tea plant- the buds, or the
processing method- sun or hot air dried. In fact, White teas are
defined as a varietal, named Varietal #1 White Down, or Varietal #2
Silver Needle, designated by the PRC as the best varietals in the
country. White Peony may be made from either varietal. Furthermore, a
place of origin certification must be present to be true White Teas
from Fuding, Fujian China.
