Tea is the national
beverage of China, who had a long history of styles and ceremonies in the art of tea. One of the most
popular style of brewing and drinking tea in China include a vessel
called a Gai Wan: covered bowl tea, popular for steeping floral and green teas, and often found in Sichuan and the northern areas in China. Oolong teas tend to favor Yixing
ware, while glass and porcelain wares are recommended for White and
Green Teas. In modern times, various teapots or even brew-in-one mugs,
with strainer baskets or
filters, have all been found to be very convenient for tea service.
Using proper teawares will uncover better flavors in teas as whole leaf
teas require room to expand and unfurl. Therefore, metal teaspoons or
other such constrictive steepers are not recommended.
