Aged for 5 years naturally. Today, we are fortunate to have anything aged naturally, as the Pu-Erh market has exploded. This version is sweet, thick and earthy, with the viscosity of dark soy sauce. For a Pu-Erh fan, this is an indulgent everyday version when you cannot get the
15 year aged Pu-Erh.
Oxidation level; 100% oxidized and fermented
Production: Pile fermentation for 40 days, then aged for 5 years
A good example of natural post fermentation after facility fermentation for the first period of time. The combined efforts produced the best of the immediate drinkability but also the long term taste of antiquity, called 'chen'. This is a collector's item that can be stored away indefinitely for further aging.
Vessel: porcelain or Yixing teapot, or porcelain gaiwan
Temperature: 205 F filtered hot water
Number of infusions: 7-8
Portion:3 gm for 8oz water.
Standard instructions: Steep for 2 minutes in a porcelain pot, decant and serve.
Specific instructions: Rinse and warm up vessel. Rinse leaves quickly. Pour leaves into vessel and shake gaiwan or teapot. Pour hot water and steep for 1 to 1.5 minutes. If using a gaiwan, stir briefly with lid at the 30 second interval. If using a teapot, swivel teapot gently to help the leaves absorb the hot water. Decant into a server or teacup and enjoy. Increase another 30 seconds for each subsequent infusion.
