The national herbal beverage of Greece! Peppery and delicious, an outstanding flower both beautiful to drink and behold. From Wikipedia: "Sideritis (also known as ironwort, mountain tea and shepherd's tea) is a genus of flowering plants well known for their use as herbal medicine, commonly as an herbal tea. Ironwort is known scientifically to be anti-microbial, anti-inflammatory, and anti-oxidant. Active elements include diterpenoids, flavonoids, and its essential oils.[12] Significant research has been done on ironwort confirming its popular use to prevent colds, flu, and allergies. Most of this research has taken place in universities in the Netherlands and in Greece, Turkey, Macedonia, Bulgaria, and Albania, where the plant is indigenous.[13] "

Steeping Instructions
  • Vessel: porcelain teapot, or porcelain gaiwan
  • Temperature: 205 F filtered hot water
  • Number of infusions: 3-4
  • Proportion: 3 gm for 8 oz water
  • Standard instructions: Steep for 2 minutes in a porcelain pot, decant and serve.
  • Specific instructions: Pour hot water onto herbs and steep for 2 minutes. If using a gaiwan, stir briefly with lid at the 30 second interval. If using a teapot, swivel teapot gently to help the herbs absorb the hot water and fall to the bottom. Decant into a server or teacup and enjoy.
