First Flush is one of the most anticipated harvests every year. The first, small leaves are picked by hand in early spring. The aroma of the leaves is sweet and nutty with a fine floral component and a characteristic crisp finish. This year's crop hails from the Glenburn Estate, one of the oldest estates in Darjeeling. This lot is also sweet and memorably bright on the palate, one of the better lots in recent memory. Great for cold-infused iced tea.
Varietal: Clonal, originally Keemun
Oxidation level; 40% oxidized
Production: By machine
Vessel: porcelain or Yixing teapot, or porcelain gaiwan
Temperature: 205 F filtered hot water
Number of infusions: 3-4
Portion:3gms for 8oz water.
Standard instructions: Steep for 3 minutes in a porcelain pot, decant and serve.
Specific instructions: Rinse and warm up vessel. Rinse leaves quickly.Pour leaves into vessel and shake gaiwan or teapot. Pour hot water and steep for 1 to 1.5 minutes. If using a gaiwan, stir briefly with lid at the 30 second interval. If using a teapot, swivel teapot gently to help the leaves absorb the hot water. Decant into a server or teacup and enjoy. Increase another 30 seconds for each subsequent infusion.
